Ethiopia Guji Shaakkisso Tima

Regular price $25.00

We finally have something with strong blueberry notes again (!), after being teased for 2 crop years with elusive and muted fruity profiles from our favoured coffee from the Guji region.

It is truly enjoyable on all brew methods that we test tasted on and is bright and sweet and we hope you'll get to experience all that for yourself too - keep scrolling for tasting notes.

Overall Notes: Blueberry explosion on espresso, with orange/yuzu brightness on long black/americano - blackberry and raspberry juiciness as it cools that is also prominent on filter brews; buttery, fruity, nutty, biscuity and candy-like on whites

Roast level: Medium roast

Recommended rest time: 2 weeks

Brew Methods: Excellent across espresso and filter brew methods (e.g. V60, Origami, Hario Switch, Aeropress, Delter, French Press, etc.)

About the producer / region:

Guji is part of the Oromia region in southern Ethiopia, next to Gedeo Zone (SNNPR), where the famous Yirgacheffe micro-region is located. This steep, green area is both fertile and high, with much of the coffee growing at 2,000m plus.

Coffee grown in the Guji zone was once classified under Sidamo (a larger zone next door in the SNNPR region.) Recently, Guji has become its own recognised area in coffee, thanks to the newly opened ECX coffee delivery center, as well as the separating classification given to Guji beans, thanks to their unique cup profile and physical attributes.

Started by a close-knit Ethiopian coffee-producing family, Sookoo Coffee produces and exports high-quality coffee from some of the most well-known regions in the world. Currently, the company is led by Ture Ware and manages washing stations in both Uraga and Shaakkisso Woredas.

For this particular coffee, 21 smallholder individual farmers have contributed to the lot; typically, growing coffee in conjunction with raising livestock. Producers in this region face challenges, with a lack of clean water and poor soil conservation.

To ameliorate these threats, producers are beginning to work together and educate each other on different methods to conserve water and promote soil health.
To improve the biodiversity and climate of the area – indigenous trees are being planted in this region.

This also helps create a microclimate for the coffee and provide nutrients to the soil. Shoondhisa, where Tima is located, is also the name of an indigenous tree located in this rich and biodiverse region.
