The Guji Wubanchi station is situated in the Mesina district, within the Guji zone of the Oromia region in Ethiopia.
The Supernatural process is an experimental process using a method that involves laying the coffee cherries on multiple layers on raised African beds to tinker with the fermentation of the coffee. During fermentation, the coffee cherries are exposed to oxygen and are covered in plastic bags to maintain heat and moisture over short bursts of time.
This process called ‘Natural Layer Thickness Fermentation’ helps develop specific flavours and qualities in the beans. Up to 5 layers can be created, but in the case of the Ethiopia Guji Wubanchi Supernatural, it is processed using 2 layers, at an average distribution of 60kg/m2, to create an increased prominence in the berries tone of the coffee.
This arduous and specific processing method creates a cup profile that accentuates the floral and berry taste notes that Ethiopian coffees are known for with an intense sweetness, winey flavour and taste notes of tropical and citrus fruits - which results truly remarkable supernatural-tasting experience.
